Red Chili and Cilantro Chicken Tacos

I made these while on near zero spoons and without much in the refrigerator. It's short and easy for days where you want something decent tasting and not fried. You'll need:

Chicken. Store bought precooked (what I used) or two medium chicken breasts

Red chili paste

Cilantro

Shredded lettuce

Cheese

Sour cream

Diced onion

Taco shells

Dice your chicken breasts and place them in a pan on medium heat.

When the chicken is nearly done cooking, about 5 minutes, mix in two (2) tablespoons of the red chili paste and cilantro to taste.

When it's nearly done, another two (2) minutes or so, mix in your diced onion and cook for another minute.

Fill your tacos and add the rest as you like.

Cooking time is about 8 minutes, prep time depends on what you use.

Cheese Ravioli with Sausage, Spinach and Pesto

Ingredients you'll need are:

1 package of hot Italian sausage, whatever your preferred brand.

7 slices of bacon

2oz of baby spinach

1 package frozen ravioli. I used cheese but you can use any kind you'd like

Pesto

Grated Parmesan

Place the sausage in a large skillet to brown on medium heat. Check and flip them every few minutes to make sure they don't burn.

While the sausage is browning place the bacon on a aluminium lined baking sheet in the oven at 375 for 15 minutes or until cooked but not crispy. The bacon cooks way more evenly in the oven than a pan and it saves space for the rest of what you'll be cooking on the oven.


Chop the spinach into medium size pieces and then place in a skillet on low heat with a small amount of water to sweat and soften. Watch it carefully and when the leave start to wilt take it off the heat.

Open the package of frozen ravioli and place in a large pot of boiling water. Let it boil while you take care of the rest of the prep.

While the ravioli boils slice the sausage and put it back in the skillet to brown more. While it does drain the bacon of grease and chop it into pieces. Combine both in a large mixing bowl with the spinach.


Add the ravioli, pesto and Parmesan to taste. Mix until coated and there you go, a fairly simple and good meal. Total prep and cook time is about 30 minutes.
